Make Your Own Fish Rub

Fish is a blank canvas for flavorful rubs.

Rubs are a mixture of herbs and spices that blend to give meat and fish a special kind of added flavor. The spices are massaged into the meat or fish so they can absorb the flavor. They are easy to make and usually can be made with ingredients you already have on hand. Begin by trying out a homemade spice rub recipe, and then add or subtract different spices until you find a combination that you like best.

Instructions

1. Mix together the onion powder, garlic powder, 1 tbsp. of salt and 1 tbsp. of pepper. Stir well to combine. Apply to any mild white fish like halibut or tilapia. Saute or grill the fish until cooked through.

2. Stir together brown sugar, chili powder, cumin, 1/8 tsp. salt and 1/8 tsp. pepper. Use a whisk to mix the rub to remove any clumps from the brown sugar. Use this rub for meatier fish like salmon or swordfish.

3. Use store-bought seafood seasonings as a base for your rub and add ingredients to make it your own. Start with Old Bay and add chili powder, cumin and lime zest to make a Mexican rub for fish tacos. Add oregano and lemon pepper for a Greek twist on fish.
