Avocado Summer Salad

Avocado salads served in the avocado skin make an impressive presentation.


While you can make a great-tasting guacamole with fresh avocados, the versatile fruit is good for more than chip dip. Avocados are rich in nutrients such as vitamins, B6, C and E, potassium and magnesium. The green, textured fruit also is a good source of fiber and monounsaturated fat, the healthy fat our body needs. You can create a healthy, light salad perfect for enjoying outdoors in the summer, with avocados as the main ingredient. This particular recipe combines vegetables such as tomatoes and peppers with the savory avocado flavor.








Instructions


1. Combine the cucumber, sweet yellow pepper, cherry tomatoes, minced basil, lime juice and garlic powder in a bowl.


2. Add the baby lettuce leaves. Toss the salad to make sure the leaves are well coated.


3. Cover and refrigerate the salad for 15 to 20 minutes.


4. Add the chopped avocado and toss gently.


5. Sprinkle the salad with the chevre or feta cheese. Serve immediately.
