Eat Fresh Oysters

Lemon juice enhances the flavor or raw oysters for some people.

Oysters come in several varieties, with flavors ranging from almost purely salty to creamy, buttery or nutty. Their texture is relatively soft; they are not tough or chewy like some other seafood. Raw oysters are likely to be resting in half a shell on a bed of ice to keep them cool and fresh. You can eat them plain or topped with a sauce of your choice.

Instructions

1. Pick up the oyster shell--hold it level so that the liquid surrounding the oyster does not fall out.

2. Slide your oyster fork or knife under the oyster in the shell. Move the fork around to loosen the oyster from the shell. Slide the oyster back and forth to ensure that you have completely loosened it from the shell.

3. Examine the oyster and find the smoothest, most level part of the shell. Hold the shell so that this smooth part is pointed toward you.

4. Lift the oyster shell to your mouth and place the smooth, level part of the shell between your lips. Tilt the shell upward to direct the oyster and its surrounding liquid into your mouth. You may need to slurp the oyster into your mouth; do this as subtly and quietly as possible.
