What Is Silpat

Silpat is the brand name for a silicone and fiberglass baking mat which turns any baking sheet or pan into a nonstick surface. It can withstand high temperatures and will provide years of use, eliminating the need for parchment paper or grease. This innovative product has been used by professional chefs and home cooks alike for many years, but its use became more widespread after it was mentioned in a food review article that appeared in the New York Times in 1998, and was regularly seen on the Food Network.








The Facts


Silpat is made of silicone, with woven fiberglass embedded inside it for strength. It is heat resistant to about 500 degrees Fahrenheit and is reusable. With proper care and use, a Silpat mat can last for years. The mat was invented by Guy Demarle, a French chemist, and is produced today by the company he founded, also called DeMarle.


Function


Silpat is a reusable nonstick surface commonly used in baking and candy making. It eliminates the need for greasing a pan, or for using parchment paper. It allows the food product to be removed from a pan without the need for a spatula. Since it is made of silicone, it will not slide around on the counter top, which also makes it ideal for rolling out pie dough or working with candy. The company now makes a version of Silpat called Roul'pat, specifically for use on the counter top.


Identification


Silpat can be identified by the brand name, printed in large letters on the edge of the mat. There are several imitators, however the quality of Silpat remains the best. If the word Silpat does not appear on the mat, it is, obviously, not a Silpat mat.








Size


Silpats come in many different sizes. The most popular size is the US half sheet pan size, which is sized to fit most home ovens, at 18 by 13 inches. But everything from the petite jelly roll size of 13 by 9 inches, to the largest size of 26 by 18 inches is produced. DeMarle also produces an octagonal shaped mat which fits microwave ovens or round pie dishes.


Care


Hand wash your Silpat mat with a damp sponge, and then rinse with water. Always allow the mat to cool before immersing it in water. The mat may feel slightly oily after use, this is normal and is not a sign of damage. Allow to dry completely before storing. The mat should never be folded for storage. It may be stored flat, or rolled.


Warning


Cutting food on top of the mat will damage the nonstick surface. Discard any mat that is torn or cut as the fiberglass material could contaminate food.
