Make Blueberry Vinaigrette

Vinaigrette is one of many delightful uses for sweet and tangy blueberries. Blueberry vinaigrette has a piquant flavor and is especially delicious on spring greens, grilled chicken, and even grilled or roasted asparagus. Make a blueberry vinaigrette to add a lovely purple splash of color to any dish.


Instructions


Tangy Blueberry Vinaigrette


1. Saute the shallots and garlic in the olive oil, and allow to cool for a few minutes.


2. Mix in all of the remaining ingredients except the blueberries. When the mixture is smooth, add the blueberries.


3. Place the mixture in a blender or food processor and pulse it several times, just until the blueberries are blended.


4. Chill and serve.

5. Place the blueberries, balsamic vinegar, salt and pepper in a blender container.


6. Blend until the mixture is creamy and smooth.


7. Add the oil and continue to blend until thoroughly mixed.


8. Use immediately.
