Keep Sandwiches Cold For A Picnic

Sandwiches are a popular picnic food.

Planning a picnic is always fun but it is important to keep safety in mind when it comes to food preparation. Keeping sandwiches cold for your picnic is particularly important if the sandwich is filled with low-acid foods such as eggs, cooked meat, fish or poultry; these are highly perishable because bacteria can grow rapidly. As well as tasting better, cold sandwiches will have a low bacteria count so are less likely to cause food poisoning.

Instructions

1. Spread softened butter or margarine from edge to edge of your bread when you prepare your sandwiches.

2. Add your filling. Fillings that freeze well include cheddar or cream cheese, sliced or ground meat or poultry, fish, cooked egg yolk and peanut butter. Fillings that do not freeze well are lettuce, carrots, tomatoes, egg white, jelly and mayonnaise.

3. Place your prepared sandwiches in plastic freezer bags (one to two sandwiches per bag) and put them in your freezer.

4. Take your sandwiches out of the freezer three hours before your picnic. They will thaw over this time and still be cold when it is time to eat them.

5. Place prepared sandwiches in reusable ice packs or insulated lunch carriers as an alternative to freezing.

6. Freeze a small can of juice and pack it beside the sandwiches around three hours before the picnic. The juice will thaw over that time, while keeping the sandwiches cool.
