Stuffed Cubanelle peppers freeze well.
Cubanelle peppers are a fleshy sweet pepper with a contradicting mild spicy heat. The peppers are a favorite to stuff -- fillings usually include some sort of sausage and a blend of cheeses. If you see Cubanelle peppers at your local farmer's market, grab a few sackfuls and make a large batch of stuffed Cubanelle peppers. Make sure to bake more enough than enough to leave leftovers. Take a few minutes to freeze the stuffed Cubanelle peppers, so that you'll be prepared for any post-season craving.
Instructions
1. Prepare and cook the stuffed Cubanelle peppers using your favorite recipe.
2. Wait until the stuffed peppers are at room temperature before you begin the freezing process. You will be handling the peppers with your hands, and you don't want to burn yourself.
3. Tear off a piece of aluminum foil twice the length of the rectangle casserole dish. Line the dish so that 2 pieces of excess foil, equal in length, protrude from each of the 2 shorter sides of the dish. (To conserve freezer space you will fold the foil over the peppers, once frozen. This method allows you to easily remove the foil-wrapped peppers from the casserole dish and transfer them to a plastic zip-top bag.)
4. Place the stuffed Cubanelle peppers in the foil lined casserole dish using a spatula if necessary. Do not fold the foil all the way down -- but do gently press the foil as much as necessary to allow the dish to fit in the freezer. Set the dish on a freezer shelf.
5. Allow the peppers to freeze overnight. Remove the casserole dish from the freezer the next day. Remove the foil and peppers from the dish and place the peppers in a large zip-top bag. Return the peppers, now inside the plastic bag, to the freezer.
6. Allow the peppers to thaw and warm them according to the original recipe when you are ready to enjoy.
