Freeze Flan

Flans are beautiful things to lay out on the table.


Flan is delicious but it's a bit fiddly to make; you need to make the pastry, cut up the filling, grate the cheese and so on. It's quite a lot of effort to go to for one meal but it isn't really that much more effort to make three flans in one go than to just make one. This is why freezing flans is so good. Have a baking session and put a few away in the freezer ready for a day when you want something that is no bother to cook.








Instructions


1. Cook the flans in their cases as usual. Allow to cool.


2. Place a pair of rulers across the top of the flan case and lay one of the other flans on top. Lay more rulers across this one and lay another flan on top.


3. Slide the tower of flans into a freezer bag. Expel as much air as possible and seal the bag.


4. Place in the freezer and keep for up to a month. Unwrap when you want to use the flan, allow to thaw at room temperature. Depending on the size of the flan, this will take between three and six hours. Place in the oven and reheat thoroughly at 340 degrees.
