Preserving enchilada sauce is a relatively easy process.
Enchilada sauce is a tomato and chili sauce that is used to top enchiladas. The sauce is much like salsa and can be made spicy or mild. There are a variety of different recipes you can use to make enchilada sauce, and if you tend to make large amounts of the sauce at once cold packing provides a good solution for keeping this sauce for long periods of time and enjoying it year round. Preserving, or canning, involves sealing freshly prepared food into jars and is a relatively easy and inexpensive process.
Instructions
1. Bring a large pot of water to boil.
2. Lower your canning jars and lids into the pot and let them sit in the boiling water.
3. Make your enchilada sauce by following your favorite recipe. Make as much of it as you would like to preserve.
4. Remove your jars and lids from the boiling water using tongs. Spoon the enchilada sauce into the jars leaving 1/2 an inch of room at the top of the jar. Add 1/2 teaspoon of salt to each pint jar, or 1 teaspoon to each quart jar. Screw the lids on tightly.
5. Lower the jars back into the boiling water using tongs. Make sure they are fully submerged and then let them sit in the water for 25 minutes if your jar is pint sized, or 30 minutes if the jar holds a quart. Remove after this time and place the jars on a rolled up towel.
6. Leave the jars to cool on the towel until the sealing process is completed. You will know this is done when the the lid has indented and pushing down on the center of the lid doesn't make it go up or down. You can now store the jars in your pantry for use whenever you would like.
