Steam Brown Rice

Rinse brown rice thoroughly before cooking it.

Brown rice is a healthy alternative to plain white rice. Although more nutritious, brown rice is more difficult to cook. Finding the perfect balance of texture can be difficult; a few minutes too little or too long and you may end up with crunchy kernels or a pot of mush. Partially cooking the rice and then steaming it is the most effective way to achieve perfect, restaurant-quality brown rice. One cup of uncooked brown rice will yield two cups of cooked rice.

Instructions

1. Rinse the rice in a strainer under cold running water for about 30 seconds.

2. Bring 12 cups of water to a rolling boil in a large pot over high heat.

3. Add the rice and salt to the boiling water. Stir it only once, then bring the water back to a boil. Allow the rice to cook in the boiling water uncovered for 30 minutes.

4. Pour the rice and water into a strainer over your kitchen sink. Allow the rice to drain thoroughly for about 15 seconds, shaking the strainer to release excess liquid.

5. Return the rice to the pot off of heat. Cover the pot with a lid or kitchen towel. Allow the rice to steam in the pot for 10 minutes. If your prefer softer rice, allow it to steam for a few minutes more.

6. Fluff the rice with a fork and serve warm.
