Instructions
1. Fill a large Dutch oven about halfway full of water, roughly 6 cups. Add 1 tsp. of salt and bring to a boil. Clean four red potatoes and remove any blemishes with a paring knife. Place in boiling water.
2. Cook the potatoes for about 15 minutes or until the potatoes show signs of tenderness. Drain the hot water in a colander and let cool before slicing the potatoes into 1/8-inch thick slices.
3. Turn a stove top burner to medium-high heat. Put your large skillet on the burner and add 1 tbsp. of olive oil into the pan. Place green pepper and onion in the skillet and cook for about five minutes until they're soft, stirring frequently. Remove the pepper-onion mixture and set aside for later use.
4. Put 2 tbsp. of oil into the frying pan, and turn the heat back to medium-high. Place the potato slices, paprika and black pepper into the skillet and cook for about 10 minutes until the slices brown. Add the onion and green pepper mixture, plus parsley, and brown for about a minute.
5. Remove the skillet from the burner. Transfer contents into a serving bowl or onto plates and serve piping hot.
