Make a statement with a cheesecake wedding cake. Instead of plain, old cake like everyone else has, serve a decadent cheesecake that will remembered for years. The process of making a cheesecake wedding cake is much the same as a regular cheesecake, just on a larger scale. It isn't hard to do and is well worth the extra effort, plus there is only minimal decorating involved, making it easy for almost anyone to make.
Instructions
To Prepare
1. Preheat the oven to 350 degrees Fahrenheit.
2. Crush the graham crackers in a large zipper seal bag and then pour into a medium mixing bowl.
3. Melt the butter in a microwave safe dish for 2 minutes or until completely melted.
4. Pour the butter over the graham crackers and mix well until a thick paste forms.
5. Press the graham cracker mixture into the bottom of each spring form pan.
6. Place the cream cheese and sugar into a large mixing bowl and mix well with an electric mixer.
7. Add the milk to the cream cheese and mix.
8. Incorporate the eggs one at a time into the mixture and blend well.
9. Stir in the sour cream until thoroughly mixed.
10. Add the vanilla extract and the flour and continue to mix until smooth.
11. Pour the filling into each spring form pan until the pans are half full.
12. Place the pans into the oven and cook for 1 hour and 30 minutes.
13. Turn the oven off and allow the pans to cool inside for 2 hours.
14. Remove the cheesecakes from the oven and cool in the refrigerator overnight.
To Decorate
15. Remove the side of each spring form pan, leaving the bottom under the cheesecakes.
16. Pour the strawberry pie filling over the cheesecake, using 1 can per cake.
17.Place the 8-inch cheesecake onto the 10-inch cheesecake. Make sure the cheesecake is centered on the top.
18. Add the 7-inch cheesecake to the top of the 8-inch cheesecake, again making sure it is centered.
19. Decorate with mint leaves.
