Bacon and banana is a strange, but not impossible, combination. The key is to get the bananas at the right stage of ripeness and to blend them with complimentary flavors. The best bananas are barely ripe, with just a hint of green. This recipe is a play on the barbecue pizza, using a mango-banana chutney and applewood smoked bacon.
Instructions
Applewood Bacon and Banana Chutney Pizza
1. Preheat oven to 350 and place rack in center.
2. Mix the provolone, sharp white cheddar, smoked gouda, and gruyere, together and set aside.
3. Brown the bacon until slightly crisp, blot oil then dice or crumble -- set aside.
4. Pour jar of mango chutney into a bowl or food processor.
5. Coarsely chop the bananas and add it them the chutney.
6. Blend until a smooth paste forms.
7. Spread the mango-banana paste on the pre-made pizza crust.
8. Top with cheese blend.
9. Sprinkle bacon and diced onion on top of the cheese.
10. Bake at 350 for 20 -- 30 minutes, or until cheese melts and edges become slightly browned.
11. Remove from oven, let sit for 5 minutes then serve and enjoy.
