Make Mustard Paint







Mustard bastes complement barbequed meats.


The spicy, acidic, pungent taste of mustard complements meat products, especially barbequed pork, ribs and chicken. If you love the taste of mustard, you can mix the condiment with classic barbeque-baste ingredients to make customized mustard "paint." Add ingredients carefully and taste your baste after each addition to ensure a good balance of sweet, spicy, salty and acidic. Make the baste at least one day before your barbeque to give the flavors time to develop.


Instructions


1. Mince one clove of garlic and saut it in 1 tbsp. olive oil until golden brown, then remove from heat. Garlic adds a savory flavor to mustard sauce. If you don't like garlic, you may omit it from the recipe.








2. Whisk mustard, salt, pepper and vinegar together with the garlic.


3. Whisk in brown sugar or molasses if you'd like a sweet taste. Alternately, you can start with honey mustard for a sweet flavor.


4. Whisk in hot sauce for an especially spicy kick. If you're starting with Dijon mustard, added hot sauce may be too spicy for some palates.


5. Transfer the baste to an airtight container and refrigerate overnight. Paint the baste on the meat with a basting brush when you're ready to barbeque.
