Make Potato Patties







Leftover mashed potatoes serve as the basis for potato patties.


Potato patties are an ingenious and delicious way to transform leftover mashed potatoes into a new dish. These are especially good to make after a big holiday dinner if you have lots of excess spuds. While they are tasty just as is, you can customize these potato patties by adding chives, cheese and bacon, and topping them with sour cream to make "loaded" potato patties.








Instructions


1. Mix cold, leftover, mashed potatoes with chopped onion and an egg. If you have a lot of mashed potatoes and the mixture seems very dry, add an additional egg. The mixture should be moist, but not as runny as a batter.


2. Coat a frying pan with cooking oil. Heat the oil on medium-high heat. Add about a tablespoon of unsalted butter to the pan, swirling the butter around as it melts.


3. Drop the potato mixture by spoonfuls into the hot oil in the pan.


4. Cook the potato patties until brown on one side. Turn patties over gently and brown the other side. Drain on paper towels. Season with salt and pepper to taste.
