Prepare Garam Masala/All Spice Powder/Indian Curry Powder

Make your own garam masala in minutes.








Garam masala, also known as all-spice powder or Indian curry powder, literally translates to "hot spice." The mixture is made from several spices, resulting in an intense, flavorful spice blend. Garam masala is used in many types of curry and as a general seasoning for vegetables. The blend has a fragrant aroma that delights the senses and a taste that cannot be matched. Mix your own spices rather than purchasing a pre-mixed product in order to get the freshest and most intense flavor.


Instructions


1. Toast cumin seeds, coriander seeds, cardamom seeds, black peppercorns, crushed cinnamon and whole cloves in a dry skillet over medium-high heat. Stir occasionally.


2. Continue toasting until the spices have darkened several shades but have not begun to char. This takes approximately 10 minutes. If necessary, lower the temperature of the burner to keep the spices from cooking too fast. They should be giving off a sweet and smoky aroma.


3. Remove from heat and allow the mixture to cool completely. Do not cover the mixture, as this will keep the moisture from escaping and affect the quality of the mix.


4. Grind the mixture using a coffee grinder or food processor until it becomes a fine powder.


5. Stir in the nutmeg and saffron. Mix well.








6. Store in an airtight container in a cool, dry location for up to three months.
