Freeze Fresh Picked Peaches

Fresh fruit is always best, but sometimes you have so much that you need to freeze it so you can enjoy that wonderful fruit days, weeks or even months from now. Peaches go bad quickly, so freezing freshly picked ones is a great way to preserve them and make sure none are wasted. It's easy to do and can be a fun process as well.








Instructions


1. Purchase freshly picked peaches or pick them directly off the tree. Wash them under very cold water. Warm or hot water can bruise the peaches and ruin them. Pat the peaches dry on some paper towels.


2. Peel the peaches with a fruit peeler or a regular knife. Use soft, smooth strokes to avoid cutting into the surface of the peach and destroying its perfection. Then cut each peach in half.








3. Remove the pit carefully and set it aside to plant later--or just throw it away. Slice the peaches further if you would like them to be smaller or fit better into the glass containers. Carefully place the peaches into a clean glass container. Use a spoon to place the peaches inside, so you can avoid bruising them.


4. Pour water or fruit juice (apple, peach and white grape work best) over the peaches. Add 1/4 tsp. of ascorbic acid to the mixture for every quart of fruit juice or water. Leave about 1/2 inch of space at the top of the container. Seal with a strong lid and store in your freezer.
