Alfredo sauce over fettuccine noodles
This simple Alfredo sauce can be made in 10 minutes. The ingredient that gives the sauce a rich flavor is whipping cream. Add three more ingredients, season to taste and the Alfredo sauce is ready to pour over fettuccine noodles or use in a recipe.
Instructions
1. Whisk 2 large egg yolks in a 3-quart mixing bowl. An easy way to separate eggs, according to Baking 911.com, is to "stand a small funnel in a measuring cup, then break the egg in the funnel. The white will slither through, leaving the yolk behind." Set the whisked egg yolks aside.
2. Prepare a mixture of whipping cream, butter and Parmesan cheese. Put 1 pint of whipping cream and 2 Tbsp. butter into a 3-quart saucepan. Bring the mixture to a boil while whisking constantly. Add 1½ cup shredded Parmesan cheese, a little bit at a time, while whisking the boiling mixture. Turn the heat down to low.
3. Combine the egg yolks and the whipping cream-butter-cheese mixture. This will create the Alfredo sauce. Add only 1/2 of the whipping cream-butter-cheese mixture to the egg yolks and whisk vigorously. Pour this combination back into the saucepan with the other 1/2 of the whipping cream-butter-cheese mixture and cook for 30 seconds, whisking the sauce continuously.
4. Add salt, pepper and ground nutmeg to taste.
